Not one meerkat was injured while writing this blog. I just saw a movie and at the end it declared that no animals were injured in producing this film. We don’t know if it’s true or not, but I just had to chuckle when I thought of it. So what’s this have to do with anything? Nothing I suppose. My daughter’s dog reminds me of a meerkat. I like meerkats. I occasionally watch Meerkat Manor. They have an interesting family interaction.
What’s some good protein to eat for breakfast? Eggs are good and cheap. I have three egg whites and one whole egg, scrambled. Then there are options to the basic scramble. You can add salsa for a South of the Border taste. A couple of tablespoons add very few calories. Get the kind with very little sugar and no added sugar if possible. Or you can make your own salsa with zero added sugar or salt.
You can other types of fruit as well. Add pineapple and you will have a Hawaiian Scramble. Even chopped apples, prunes, peaches, and any other fruit you like.
You can add vegetables to your basic scramble mix. Trader Joe’s has a combination of frozen bell peppers, green, yellow, and red called Melange a Trois. I looked that up in the French to English translation dictionary and it means, “Mixture has three.” Unfortunately, it means three of anything and originally meant three in a sexual situation. Anyway, this has three peppers. I like it mixed with a few onions. You can also use other vegetables, such as asparagus, broccoli, green beans, and most any vegetable you like.
You can also add some ground turkey, chicken, or beef to the basic scramble along with some onions. Probably other meats would work, but I don’t like gamey meats like deer, bison, and duck.
You can do lots with eggs, but if you don’t like eggs, just forget what I said.
