Continuing observations on our California trip. For lunches as we were traveling, we fixed a salad of chicken, lettuce, and tomatoes and ate it along the way. We mostly were able to find a rest stop and a couple of times we ate in a McDonald’s parking lot and got coffee after our salad. We didn’t need to stop anywhere to find food we could eat on our diet. We not only stayed ‘on diet’ we saved some money as well. For dinners we heated our chicken in a microwave which all the motels had. We also steamed some veggies. We left on a Friday and on Saturday night we ate out with family in Texas and again on Sunday after church. In both cases the food met our dietary restrictions well. On the following Tuesday we arrived in Peoria, AZ at a timeshare where we had full kitchen facilities. We got more chicken and prepared it there for the next week. It required planning but it worked.
